  • The cactus is essential in Mexico in that it produces nopales, which are used in everyday Mexican dishes. We decided on Xoconostle (pronounced choko-nose-leh), an exotic sour fruit on wild cactus plants in Central Mexico, due to its peculiar taste that is sweet and acidic, a sweet-sour taste. We added agave nectar from the same nopal and cactus to sweeten it up with for a refreshing tart citrus flavor. This spread is a lovely shade of pear with a fruity fragrance.
